Abstract

This study examines the implementation of green purchasing as part of the operational sustainability strategy at the St. Regis Hotel Bali. As part of Marriott International, the hotel refers to the Responsible Sourcing Guide and the Serve 360 principle in green procurement. With a qualitative descriptive approach through observation and interviews, it was found that hotels have implemented seven out of ten Marriott indicators and five green purchasing indicators from the Green Supply Chain, such as eco-labelling, eco-friendly packaging, cooperation with environmentally friendly suppliers, the 3R principle, and the selection of ISO14001 certified vendors. The main obstacles to full implementation include high costs, supplier limitations, and low demand. This research provides insights for the development of more effective sustainable procurement strategies, in order to improve the image, guest satisfaction, and contribution to environmental conservation.
